Crack egg into unheated sauce pan and beat.
Next add in heavy cream and whisk until blended.
Cook on low to medium heat stirring constantly.
Add in honey 1 tablespoon at a time and continue stirring until mixture slightly thickens and becomes custard like.
Remove from heat, transfer to a mixing bowl and allow to cool.
Once cooled, add in milk kefir and vanilla and mix.
Cover bowl and set in refrigerator for 1 hour.
Remove mixture from refrigerator and add to freezer bowl.
Follow instruction manual of your ice cream maker for churning.
Once churned, scoop into container and freeze or enjoy immediately!
