Kefir Ice Cream

A delicious, creamy and probiotic rich kefir ice cream recipe! It's tangy and sweet dessert. A much healthier alternative than regular ice cream.

Equipment

  • Sauce Pan
  • Ice Cream Maker
  • Container for freezing

Ingredients
  

  • 1 egg
  • ¾ cup heavy cream
  • 5-6 tbsp honey
  • 1 ¼ cup kefir
  • 1-2 tsp vanilla extract

Instructions
 

  • Crack egg into unheated sauce pan and beat.
  • Next add in heavy cream and whisk until blended.
  • Cook on low to medium heat stirring constantly.
  • Add in honey 1 tablespoon at a time and continue stirring until mixture slightly thickens and becomes custard like.
  • Remove from heat, transfer to a mixing bowl and allow to cool.
  • Once cooled, add in milk kefir and vanilla and mix.
  • Cover bowl and set in refrigerator for 1 hour.
  • Remove mixture from refrigerator and add to freezer bowl.
  • Follow instruction manual of your ice cream maker for churning.
  • Once churned, scoop into container and freeze or enjoy immediately!
