How to Make Kefir Ice Cream: A Healthier Probiotic Rich Option

Ice Cream to me is one of the best comfort foods. Any season, any occasion, ice cream is such a delicious treat. My kids love ice cream too and I love seeing the excitement on their faces when we eat it. So when I realized I could turn nutritious milk kefir into a kefir ice cream I was thrilled! Now my family’s favorite treat has become a healthier option.

What is Milk Kefir?

Milk kefir is fermented milk that is like a thin yogurt. It is tangy, sweet and probiotic rich. Probiotic rich foods boost the immune system and aid in digestion by improving the balance of healthy bacteria in the gut. If you are not already familiar with milk kefir and wish to learn more check out my post how to make milk kefir here.

Why is Kefir Ice Cream Better Than Regular Ice Cream?

I love making homemade ice cream. Store bought is full of ingredients that aren’t the best for anyones health. I usually make ice cream with grass fed raw milk which is nutrient dense on its own but using the milk kefir adds the extra benefit of probiotics. Cultured foods are incredibly beneficial for our gut health.

How Does the Taste of Kefir Ice Cream Compare to Regular?

Kefir ice cream definitely has a noticeable tang to it but other than that I find the taste to be very similar to regular. The texture of it is identical to regular ice cream. It is creamy, smooth and delicious.

Do I need an Ice Cream Maker?

For this recipe I used this Ice Cream Maker. However, if you already have a kitchenaid stand mixer then you can get an ice cream attachment.

Equipment you need:

Sauce Pan
Ice Cream Maker *make sure freezer bowl has been in the freezer for at least 12 hours before beginning
Container for freezing finished product (a Tupperware or bread pan also well)

Ingredients:

1 egg
3/4 cup heavy cream
5-6 tablespoons honey
1 1/4 cup milk kefir
1-2 teaspoons vanilla extract

How to Make Kefir Ice Cream:

  1. Crack egg into unheated sauce pan and beat.
  2. Next add in heavy cream and whisk until blended.
  3. Cook on low to medium heat stirring constantly.
  4. Add in honey 1 tablespoon at a time and continue stirring until mixture slightly thickens and becomes custard like.
  5. Remove from heat, transfer to a mixing bowl and allow to cool.
  6. Once cooled, add in milk kefir and vanilla and mix.
  7. Cover bowl and set in refrigerator for 1 hour.
  8. Remove mixture from refrigerator and add to freezer bowl.
  9. Follow instruction manual of your ice cream maker for churning.
  10. Once churned, scoop into container and freeze or enjoy immediately!
